A great summer dish to cool down to. Easy to prepare, this wonderful appetizer or dessert soup can be customized to your individual tastes. Keep the soup basic, but add your own spice mixture, including such treats as cardamon or saffron. Fruit can be substituted out for others as well; as long as orange juice is kept as the base of the soup, any proportional combination can work.

Estimated Time of Cooking: 45 minutes to an hour (most of the time spent chilling the soup)
2 pints – Orange juice
6 – Whole cloves
½ – Vanilla bean
1 teaspoon – Coarsely ground white pepper
1 – Cinnamon stick
3 – Peeled orange segments
2 slices – Kiwi
½ pint – Strawberries, cut into quarters
- In a medium saucepan, bring the orange juice to a boil. Remove juice from the heat.
- Stir in the cloves, the vanilla bean, pepper, and the cinnamon stick. Allow the spices to marinate in the juice in the refrigerator until the mixture cools, about 45 minutes to 1 hour.
- Strain the soup and spoon into individual soup bowls. Add the orange, kiwi, and strawberries.
